Ingredients
  

  • cups all-purpose flour
  • ½ cup ube halaya ube jam
  • ¼ cup vegan butter softened
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 tablespoons plant-based milk
  • Optional:
  • Vegan white chocolate chips

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, cream vegan butter, brown sugar, and granulated sugar until smooth.
  • Add ube halaya and vanilla extract; mix well.
  • In another bowl, whisk flour, baking soda, and salt.
  • Gradually mix dry ingredients into wet ingredients.
  • Add plant-based milk and stir into a soft dough.
  • Fold in vegan white chocolate chips if using.
  • Scoop dough into balls, place on baking sheet, and flatten slightly.
  • Bake for 10–12 minutes until edges are set and centers are soft.
  • Cool on baking sheet for 5 minutes, then transfer to a rack.

  • Avoid overbaking to keep cookies soft.
  • Chill dough if cookies spread too much.
  • Use good-quality ube halaya for best flavor.
