- 1½ cups all-purpose flour
- ½ cup ube halaya ube jam
- ¼ cup vegan butter softened
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 2 tablespoons plant-based milk
- Optional:
- Vegan white chocolate chips
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, cream vegan butter, brown sugar, and granulated sugar until smooth.
Add ube halaya and vanilla extract; mix well.
In another bowl, whisk flour, baking soda, and salt.
Gradually mix dry ingredients into wet ingredients.
Add plant-based milk and stir into a soft dough.
Fold in vegan white chocolate chips if using.
Scoop dough into balls, place on baking sheet, and flatten slightly.
