  • 2 tablespoons olive oil plus more as needed
  • 1 small sweet onion sliced
  • 1 medium green bell pepper seeded and thinly sliced
  • 4 ounces oyster mushrooms torn into shreds or sliced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground black pepper
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon vegan Worcestershire sauce
  • 1 tablespoon kitchen bouquet optional for browning
  • 2-3 tablespoons vegan butter softened (optional)
  • 4 tablespoons vegan butter
  • 1/4 cup unsweetened almond milk
  • 8 ounces vegan provolone cheese ripped into small pieces

Instructions
 

Preparation

  • Start by hydrating your soy curls. Place them in a bowl and pour the warm vegetable broth over them. Allow them to soak for about 10-15 minutes until softened. Drain well and gently squeeze out any excess liquid.

Cooking

  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onions and sauté for about 5 minutes until they start to soften.
  • Toss in the bell pepper and oyster mushrooms, and continue to sauté for another 5-7 minutes until everything is tender and slightly caramelized.
  • Add the soaked soy curls to the skillet along with the garlic powder, onion powder, paprika, and black pepper. Stir well to combine and let it cook for another 5 minutes.
  • Pour in the soy sauce, Worcestershire sauce, and kitchen bouquet (if using) to caramelize the mixture lightly.
  • Reduce the heat to low, and add the almond milk and vegan cheese. Stir gently until the cheese melts and becomes gooey.

Assembly

  • Slice the hoagie rolls lengthwise, and if desired, spread softened vegan butter on the insides.
  • Spoon generous amounts of the soy curl mixture into each roll, ensuring it’s a heaping portion!

Serving

  • If you prefer a toasted sandwich, place the filled hoagies under a broiler for 2-3 minutes to crisp up the rolls and melt the cheese further.
  • Serve immediately with your favorite sides—crispy fries or a simple salad work great!
