Ingredients
  

For the Peach Filling

  • 6-7 pieces ripe peaches, peeled and sliced
  • 1/2 cup granulated sugar for the filling
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 piece lemon, zested
  • 1/2 cup lemon juice freshly squeezed

For the Topping

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar for topping
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup soy milk or another plant-based milk
  • 1/4 cup melted vegan butter or coconut oil
  • 1/2 teaspoon vanilla extract additional for the topping

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine sliced peaches with 1/2 cup of sugar, cornstarch, vanilla extract, cinnamon, nutmeg, lemon zest, and lemon juice. Let sit for 10-15 minutes.
  • Transfer the peach mixture into a greased baking dish.

Create the Topping

  • In another bowl, whisk together flour, 1/2 cup of sugar, baking powder, and salt.
  • Pour in soy milk and melted vegan butter. Mix until just combined; the dough should be slightly lumpy.
  • Spoon the batter over the peaches, allowing some fruit to peek through.

Bake

  • Bake for 30-35 minutes, or until the topping is golden brown and a toothpick inserted comes out clean.
  • Let cool for a few minutes before serving warm.

Notes

Use fresh, ripe peaches for best results. You can prepare the filling a day ahead. Best served warm with vegan ice cream.
