Ingredients
  

  • * 1 ½ cups all-purpose flour
  • * 1 cup fresh orange juice
  • * 1 tablespoon orange zest
  • * ¾ cup sugar
  • * ⅓ cup vegetable oil or melted coconut oil
  • * 1 teaspoon vanilla extract
  • * 1 teaspoon baking soda
  • * ½ teaspoon baking powder
  • * ½ teaspoon salt
  • For the glaze:
  • * 1 cup powdered sugar
  • * 2–3 tablespoons fresh orange juice

Instructions
 

  • Preheat oven to 350°F (175°C) and line a muffin tin with liners.
  • In a bowl, mix flour, baking soda, baking powder, and salt.
  • In another bowl, whisk orange juice, zest, sugar, oil, and vanilla.
  • Combine wet and dry ingredients and mix until just combined.
  • Divide batter evenly into muffin cups.
  • Bake for 18–22 minutes until lightly golden and a toothpick comes out clean.
  • Let muffins cool completely.
  • Whisk glaze ingredients until smooth and drizzle over muffins.

  • Use fresh orange juice for best flavor.
  • Do not overmix batter to keep muffins soft.
