- Crumble Base & Topping
- 3 cups all-purpose flour spooned and leveled
- ¾ cup granulated sugar
- ¾ cup brown sugar
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup vegan butter cold and cubed
- Berry Filling
- 4 cups mixed berries fresh or frozen, do not thaw
- 3 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang. Lightly grease.
In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, and salt.
Cut in cold vegan butter using a fork or fingers until crumbly.
Reserve 1½ cups of the mixture for the topping.
Press remaining crumble firmly into the prepared pan to form the base.
In another bowl, toss berries with cornstarch, lemon juice, and vanilla.
Spread berry mixture evenly over the base.
Sprinkle reserved crumble evenly over the berries.
Bake for 40–45 minutes, until the top is lightly golden and the filling is bubbling.
Cool completely (at least 1 hour) before slicing.
