  • 1 onion, chopped
  • 1 cup vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

Preparation

  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent—about 3-4 minutes.
  • Stir in the minced garlic and cook for another minute, allowing the fragrance to fill your kitchen.
  • Add the drained butter beans to the skillet. Stir well to combine them with the aromatics.
  • Add the vegetable broth, oregano, and thyme to the skillet. Mix everything together and bring it to a simmer.
  • Allow the mixture to simmer for about 10-15 minutes, allowing the beans to absorb the flavors.
  • Taste and adjust with salt and pepper.
  • Garnish with freshly chopped parsley and serve hot.

Notes

For best flavor, use fresh herbs instead of dried when possible. To enhance the taste, a squeeze of lemon juice before serving can brighten the dish.
