- 1 cup polenta coarse cornmeal
- 4 oz goat cheese crumbled
- 3 tablespoons olive oil

- 1 –2 teaspoons fresh thyme or rosemary
- Salt and black pepper to taste
- For Polenta:
- 4 cups vegetable broth or water
- 1 tablespoon butter optional
