  • 1 can black beans, drained and rinsed Provides protein and fiber
  • 1 cup corn (fresh, canned or frozen) Add fresh corn if available for better flavor
  • 1 bell pepper, diced Choose your preferred color
  • 1 avocado, diced Adds creaminess
  • 1/2 onion, finely chopped Use red or white onion based on preference
  • 2 tablespoons olive oil Use extra virgin for best flavor
  • 1 tablespoon lime juice Essential for flavor balance
  • Salt and pepper to taste Adjust according to preference
  • Chopped cilantro for garnish (optional) Can be replaced with parsley if disliked

Instructions
 

Preparation

  • Rinse the black beans under cold water and drain them well.
  • If using fresh corn, slice it off the cob.
  • Dice the bell pepper and avocado, and finely chop the onion.

Combine

  • In a large mixing bowl, combine the black beans, corn, bell pepper, avocado, and onion.

Dressing

  • Drizzle with olive oil and lime juice.
  • Season with salt and pepper to taste.

Toss and Serve

  • Gently toss the salad together until all ingredients are coated in the dressing.
  • If using cilantro, sprinkle it on top just before serving.
  • Serve immediately or chill to allow flavors to meld.

Notes

Use fresh ingredients for better flavor. Let it marinate for 30 minutes for enhanced taste.
