  • 1 tablespoon sesame seeds
  • ½ teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ¼ teaspoon smoked paprika
  • Pinch of salt
  • ¼ cup granulated sugar
  • 1 tablespoon water
  • Optional Garnish:
  • Fresh parsley or mint
  • Tahini or yogurt drizzle
  • Lemon zest

Instructions
 

  • Prep
  • Preheat oven to 400°F (200°C).
  • Line a baking sheet with parchment paper.
  • Toss carrots with olive oil, salt, pepper, and honey (or maple syrup).
  • Spread in a single layer.
  • Roast the Carrots
  • Roast for 25–30 minutes, flipping halfway through.
  • Carrots should be fork-tender and caramelized at the edges.
  • Remove from oven and set aside.
  • Make the Dukkah Brittle
  • In a small saucepan over medium heat, combine sugar and water.
  • Cook without stirring until sugar melts and turns golden amber.
  • Quickly stir in chopped nuts, sesame seeds, cumin, coriander, paprika, and salt.
  • Immediately pour onto parchment paper and spread thinly.
  • Let cool completely until hardened.
  • Break into small shards.
  • Assemble
  • Arrange warm roasted carrots on a serving platter.
  • Sprinkle generously with dukkah brittle pieces.
  • Garnish with herbs or drizzle with tahini if desired.
  • Serve immediately for best crunch.
