Ingredients
  

  • 4 cups mixed greens or fresh spinach
  • 1 cup mandarin orange segments
  • ¼ cup sliced red onion
  • ¼ cup crumbled feta or goat cheese
  • ¼ cup toasted almonds or walnuts
  • Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • ½ teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions
 

  • Wash and dry the mixed greens or spinach thoroughly.
  • If using canned mandarins, drain them well to remove excess liquid.
  • In a small bowl whisk together olive oil, vinegar, honey, Dijon mustard, salt, and black pepper to make the dressing.
  • In a large bowl combine mixed greens, mandarin orange segments, and sliced red onion.
  • Sprinkle crumbled feta or goat cheese and toasted almonds or walnuts over the salad.
  • Drizzle the vinaigrette over the salad just before serving.
  • Toss gently until the ingredients are lightly coated.

  • Add dressing just before serving to keep the greens crisp.
  • Toast the nuts briefly in a dry pan to enhance their flavor.
  • If you prefer a sweeter salad, add extra mandarin oranges or a drizzle of honey.
