  • 2 pieces ripe peaches, halved and pitted Look for firm yet slightly pliable peaches.
  • 8 ounces burrata cheese Fresh mozzarella can be used as a substitute.
  • 2 cups mixed salad greens (arugula, spinach, or your preferred mix)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup walnuts, toasted Toasting enhances flavor.

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • to taste salt and pepper

Preparation

  • Heat your grill or grill pan over medium-high heat. Brush the cut sides of the peaches lightly with olive oil.

Grilling Peaches

  • Place the peaches cut-side down on the grill. Grill for about 3-4 minutes, or until grill marks appear and the peaches soften slightly. Remove from heat and let cool before slicing.

Assembling the Salad

  • In a large bowl, combine the mixed greens and halved cherry tomatoes. Slice the grilled peaches and add them to the mix. Tear the burrata into pieces and nestle them among the greens and peaches.

Dressing the Salad

  • In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper. Drizzle the dressing over the salad and toss gently to combine.

Finishing Touch

  • Sprinkle the toasted walnuts over the top for that satisfying crunch.

Serving

  • Serve your salad immediately, or chill for a few minutes to let the flavors meld before diving in.

Notes

Avoid overcooking the peaches and add dressing just before serving to keep greens crisp. Your salad can be complemented with grilled chicken or feta cheese.
