- 2 lbs potatoes Yukon Gold or red, cut into bite-sized pieces
- 4 cloves garlic minced
- 3 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried herbs rosemary, thyme, or Italian seasoning
- Optional: paprika
- Optional: grated Parmesan cheese
- Optional: fresh parsley
Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large bowl, toss potatoes with olive oil, garlic, salt, pepper, and herbs.
Mix until evenly coated.
