- For the Filling:
- 14 oz 400g firm tofu
- 1/2 cup plant-based milk
- 1/4 cup nutritional yeast
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp turmeric
- Salt and pepper to taste
- Vegetables:
- 1 cup spinach
- 1/2 cup mushrooms sliced
- 1/2 cup bell peppers chopped
- 1/4 cup onion chopped
- Optional Add-Ins:
- 1/2 cup vegan cheese
- Fresh herbs parsley or thyme
Preheat oven to 375°F (190°C).
Blend tofu, plant milk, nutritional yeast, and spices until smooth.
Sauté vegetables lightly to remove excess moisture.
Stir vegetables into the tofu mixture.
