Preparation

  • In a large pot, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they're soft and fragrant, about 5 minutes.
  • Stir in the pumpkin puree, vegetable broth, ground ginger, and ground cinnamon. Bring the mixture to a gentle boil.
  • Reduce the heat and let the soup simmer for about 15-20 minutes.
  • Stir in the coconut milk, seasoning with salt and pepper to taste. Let it simmer for an additional 5 minutes.
  • Use an immersion blender to puree the soup directly in the pot until smooth.
  • Ladle the soup into bowls and top with pumpkin seeds for that extra crunch.

Notes

For extra creaminess, increase the amount of coconut milk or add a splash of heavy cream. You can customize the soup with spices like cayenne pepper or apple cider vinegar for brightness. Store leftovers in an airtight container in the fridge for up to 4 days.
