  • 2 cans Chickpeas, canned Drained and rinsed
  • 1 cup Coconut Milk or Cream Dairy-free option
  • 1 cup Vegetable Broth
  • 2 tablespoons Lemon Juice Freshly squeezed
  • 1 tablespoon Lemon Zest

Seasonings

  • 1 tablespoon Lemon Pepper Seasoning
  • 1 small Onion, chopped
  • 2 cloves Garlic, minced
  • to taste Salt and Pepper

Optional Add-Ins

  • 1 cup Spinach or Kale, chopped
  • 1 cup Bell Peppers, chopped
  • 1 cup Cherry Tomatoes, halved
  • to garnish Fresh Herbs (parsley or basil)

Instructions
 

Preparation

  • In a large skillet over medium heat, add a splash of olive oil. Once hot, add chopped onions and minced garlic. Sauté until fragrant and the onions become translucent.
  • Drain and rinse the chickpeas, then add them to the skillet. Stir to combine them with the aromatics.

Cooking

  • Pour in the vegetable broth, scraping the bottom of the skillet to release any stuck bits. Bring to a simmer.
  • Reduce the heat and add the coconut milk or cream along with lemon juice and zest. Stir well to combine.
  • Sprinkle in the lemon pepper seasoning, salt, and pepper. Adjust seasoning to taste.
  • If using, add chopped spinach, bell peppers, or cherry tomatoes. Cook until the greens are wilted and the peppers are tender.
  • Once everything is heated through, remove from heat. Serve immediately, garnished with fresh herbs if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days or freeze for up to 3 months. Reheat on stovetop or microwave.
