  • 1 head cauliflower, chopped into florets
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup nutritional yeast Can be substituted with grated vegan cheese
  • Salt and pepper, to taste
  • Lemon juice, to taste

Preparation

  • Steam the cauliflower by boiling a pot of water and placing the cauliflower florets in a steamer basket above the boiling water. Steam for about 10-12 minutes until tender.
  • In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.

Blending

  • Once the cauliflower is cooked, transfer it to a blender along with the sautéed garlic, vegetable broth, nutritional yeast, salt, pepper, and lemon juice. Blend until smooth and creamy.
  • Taste and adjust the seasoning as desired, adding more salt, pepper, or lemon juice if needed.

Serving

  • Pour the creamy cauliflower Alfredo sauce over your favorite pasta, baked dishes, or roasted vegetables. Enjoy!

Notes

For a creamier texture, consider adding tahini or cashew cream. This sauce freezes well, so make a larger batch and store it for quick meals later. Experiment with spices like nutmeg or Italian herbs for additional flavor.
