Ingredients
  

  • * 12 oz pasta spaghetti, penne, or fusilli
  • * 1 ripe avocado
  • * 1 cup fresh basil leaves
  • * 2 cloves garlic
  • * 2 tablespoons olive oil
  • * 2 tablespoons lemon juice
  • * ¼ cup grated parmesan cheese or nutritional yeast
  • * Salt and black pepper to taste
  • * ½ cup pasta water as needed
  • * Optional: pine nuts walnuts, cherry tomatoes

Instructions
 

  • Cook pasta in salted water until al dente and reserve ½ cup pasta water.
  • In a blender, combine avocado, basil, garlic, olive oil, lemon juice, and cheese.
  • Blend until smooth and creamy.
  • Add a splash of pasta water to loosen the sauce if needed.
  • Transfer sauce to a bowl or pan.
  • Add cooked pasta and toss to coat evenly.
  • Add more pasta water as needed for a silky texture.
  • Season with salt and pepper.
  • Serve immediately with optional toppings.
