- * 1 ripe avocado
- * 1 cup fresh basil leaves
- * 2 cloves garlic
- * 2 tablespoons olive oil
- * 2 tablespoons lemon juice
- * ¼ cup grated parmesan cheese or nutritional yeast
- * Salt and black pepper to taste
- * ½ cup pasta water as needed
- * Optional: pine nuts walnuts, cherry tomatoes
Cook pasta in salted water until al dente and reserve ½ cup pasta water.
In a blender, combine avocado, basil, garlic, olive oil, lemon juice, and cheese.
Blend until smooth and creamy.
Add a splash of pasta water to loosen the sauce if needed.
Transfer sauce to a bowl or pan.
Add cooked pasta and toss to coat evenly.
Add more pasta water as needed for a silky texture.
Season with salt and pepper.
