Ingredients
  

  • Crumble Base & Topping
  • cups all-purpose flour
  • 1 cup rolled oats
  • ¾ cup granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ¾ cup cold unsalted butter cubed
  • 1 teaspoon vanilla extract
  • Strawberry Filling
  • cups fresh strawberries hulled and diced
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Instructions
 

  • Prep
  • Preheat oven to 350°F (175°C).
  • Line an 8×8-inch baking pan with parchment paper, leaving overhang for easy removal.
  • Make the Crumble
  • In a large bowl, mix flour, oats, sugar, baking powder, and salt.
  • Cut in cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  • Stir in vanilla extract.
  • Press ⅔ of the crumble mixture firmly into the bottom of the prepared pan.
  • Strawberry Filling
  • In a separate bowl, toss strawberries with sugar, lemon juice, and cornstarch.
  • Spread strawberry mixture evenly over the crust.
  • Assemble & Bake
  • Sprinkle the remaining crumble evenly over the strawberries.
  • Bake for 40–45 minutes, until the top is golden and the filling is bubbling.
  • Remove from oven and cool completely in the pan.

Notes

  • Cooling fully is essential—bars slice cleanly once the filling sets.
  • Cold butter is key for a crumbly texture.
  • Fresh strawberries give the best flavor and consistency.
  • Bars firm up even more after chilling.
