- Crumble Base & Topping
- 1½ cups all-purpose flour
- 1 cup rolled oats
- ¾ cup granulated sugar
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ¾ cup cold unsalted butter cubed
- 1 teaspoon vanilla extract
- Strawberry Filling
- 2½ cups fresh strawberries hulled and diced
- ¼ cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
Prep
Preheat oven to 350°F (175°C).
Line an 8×8-inch baking pan with parchment paper, leaving overhang for easy removal.
Make the Crumble
In a large bowl, mix flour, oats, sugar, baking powder, and salt.
Cut in cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
Stir in vanilla extract.
Press ⅔ of the crumble mixture firmly into the bottom of the prepared pan.
Strawberry Filling
In a separate bowl, toss strawberries with sugar, lemon juice, and cornstarch.
Spread strawberry mixture evenly over the crust.
Assemble & Bake
Sprinkle the remaining crumble evenly over the strawberries.
Bake for 40–45 minutes, until the top is golden and the filling is bubbling.
Remove from oven and cool completely in the pan.
