These Almond Coconut Date Balls are a naturally sweet, no-bake snack made with Medjool dates, almonds, and shredded coconut. Soft, chewy, and packed with wholesome ingredients, they’re perfect for meal prep, quick energy boosts, or healthy desserts—ready in minutes with no refined sugar.

Ingredients
  

  • cups Medjool dates pitted
  • 1 cup raw almonds unsalted
  • ¾ cup unsweetened shredded coconut plus more for rolling, optional
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional add-ins:
  • 1 tablespoon chia seeds or ground flaxseed
  • 1 –2 tablespoons cocoa powder

Instructions
 

  • If dates are dry, soak in warm water for 5–10 minutes, then drain well.
  • Add almonds to a food processor and pulse until finely chopped (not paste).
  • Add dates, shredded coconut, vanilla extract, and salt.
  • Process for 30–60 seconds, scraping down sides as needed, until the mixture sticks together when pressed.
  • If too dry, add 1–2 teaspoons water and pulse again.
  • Roll into bite-sized balls.
  • Optional: Roll in extra shredded coconut.
  • Chill for 10–15 minutes to firm up before serving.

Notes

  • Soft dates are key for the right texture.
  • Avoid over-processing almonds or they’ll turn buttery.
  • A pinch of salt makes the natural sweetness pop.
