- 1 lb vegan pizza dough store-bought or homemade
- 1½ cups vegan mozzarella-style cheese shredded
- ½ cup bell peppers finely diced
- ½ cup mushrooms finely chopped
- Flavor Base
- ½ cup pizza sauce vegan-friendly
- 1 tsp Italian seasoning
- ½ tsp garlic powder
- Pantry Staples
- 1 –2 tbsp olive oil for brushing
- Salt to taste
- Optional: vegan pepperoni or plant-based sausage
Prep
Preheat oven to 400°F (205°C). Line a baking sheet with parchment paper.
Roll pizza dough on a lightly floured surface into a large rectangle about ¼-inch thick.
Cut into 3×4-inch rectangles or squares.
Assemble
Spoon a small amount of pizza sauce onto each dough piece, leaving a border.
Add vegan cheese, vegetables, and optional vegan pepperoni.
Sprinkle lightly with Italian seasoning and garlic powder.
Roll & Bake
Roll each piece tightly into a log. Pinch seams and ends to seal.
Place seam-side down on the baking sheet. Brush lightly with olive oil.
Bake 14–18 minutes, until golden brown and crisp.
Finish
Cool 5 minutes before serving to let the filling set.
